For the Quiche Filling
  • 1 medium Zucchini diced
  • 1 cup Corn fresh or frozen
  • 4 oz Goat Cheese crumbled
  • 1/4 cup Basil chopped
  • 1 tsp Lemon Zest finely grated
  • 4 large Eggs organic preferred
  • 1/2 cup Milk or Cream whole or almond milk
  • to taste Salt
  • to taste Pepper
Optional Crust
  • 1 pre-baked Pie Shell for added crunch

Method
 

Directions
  1. Preheat your oven to 375°F (190°C).
  2. In a mixing bowl, combine zucchini, corn, goat cheese, basil, and lemon zest. Add eggs and milk or cream, then season with salt and pepper. Mix well.
  3. Grease a 9-inch pie plate and pour the filling into it evenly.
  4. Bake for 25-30 minutes or until the top is lightly golden and a knife comes out clean.
  5. Allow to cool for 5-10 minutes before slicing and serving.
