  • 1 medium Carrot finely diced
  • 2 stalks Green Onions finely chopped
  • 5 grams Dried Shiitake Mushrooms soaked and finely chopped
  • 2 tablespoons Golden Mountain Sauce or use soy sauce
  • 1 tablespoon White Sugar coconut sugar or honey can work
  • 1 tablespoon Oyster Sauce opt for vegetarian version if needed
  • 1 tablespoon Cornstarch or substitute with tapioca starch
  • 20 sheets Dumpling Wrappers gluten-free options available
  • 1 tablespoon Sesame Oil or vegetable oil
  • 1 tablespoon Garlic Oil optional for extra flavor
  • 2 tablespoons Crispy Fried Garlic optional garnish

Method
 

Step-by-Step Instructions for Kanom Jeeb Thai Dumplings
  1. Using a mortar and pestle, pound together the coriander roots, black peppercorns, and garlic until you achieve a fine paste. Set aside.
  2. In a mixing bowl, combine the Golden Mountain sauce, sugar, sesame oil, and oyster sauce. Stir well until fully integrated.
  3. Blend the ground pork with the sauce mixture, egg, and cornstarch until smooth. Add the prepared spice mixture along with diced carrots, chopped green onions, and mushrooms. Mix thoroughly.
  4. Take a wonton wrapper and place it over the back of a spoon. Spoon a portion of the filling onto the center, dampen edges with water, fold, and seal.
  5. Prepare your steamer by lining it with parchment paper. Arrange the dumplings in a single layer and steam over medium heat for 10 minutes.
  6. Once steamed, remove the dumplings from the steamer. Serve hot, garnished with crispy fried garlic if desired.
