Step-by-Step Instructions
  1. In a medium saucepan, bring 1¾ cups of water and 1 teaspoon of kosher salt to a vigorous boil over medium-high heat.
  2. Stir in 1½ cups of pearl couscous, cover, and reduce heat to low. Simmer for about 10 minutes until tender.
  3. In a dry skillet over medium heat, toast ¼ cup of pine nuts for 2-3 minutes until golden.
  4. Fluff the cooked couscous with a fork, then mix in ½ cup of pesto, ½ cup of Parmesan, and 1 teaspoon of lemon zest.
  5. Transfer to a serving dish, garnish with toasted pine nuts and fresh basil, and serve warm.
