Method
 

Step-by-Step Instructions
  1. Melt the dark chocolate and coconut oil in a microwave-safe bowl, stirring until smooth.
  2. Prepare the crunch mixture by adding peanut butter and quinoa crisps to the melted chocolate, mixing well.
  3. Make the peanut butter filling by whisking together remaining peanut butter and maple syrup, then folding in coconut flour until thick.
  4. Spoon about 1/2 tablespoon of the chocolate mixture into silicone cupcake liners, forming a base layer and freezing for 10 minutes.
  5. Add flattened peanut butter filling into each cup liner on top of set chocolate.
  6. Cover the filling with more chocolate mixture and return to the freezer for 20 minutes to set completely.
  7. Serve and enjoy your Quinoa Crunch Peanut Butter Cups or store them in an airtight container for up to 60 days.
