- Melt the dark chocolate and coconut oil in a microwave-safe bowl, stirring until smooth.
- Prepare the crunch mixture by adding peanut butter and quinoa crisps to the melted chocolate, mixing well.
- Make the peanut butter filling by whisking together remaining peanut butter and maple syrup, then folding in coconut flour until thick.
- Spoon about 1/2 tablespoon of the chocolate mixture into silicone cupcake liners, forming a base layer and freezing for 10 minutes.
- Add flattened peanut butter filling into each cup liner on top of set chocolate.
- Cover the filling with more chocolate mixture and return to the freezer for 20 minutes to set completely.
