  • 8 pieces Corn Tortillas soft and pliable

  • 2 tablespoons Olive Oil use for sautéing

Step-by-Step Instructions
  1. Preheat your oven to 450°F (232°C) and gather all ingredients.
  2. Heat olive oil in a skillet over medium heat, add diced onion and salt, sauté for 3-4 minutes.
  3. Add minced garlic and optional chipotle pepper, cooking for about 30 seconds until fragrant.
  4. Stir in chili powder, ground cumin, smoked paprika, and tomato paste; cook for 1-2 minutes.
  5. Fold in black beans and vegetable broth, mashing some beans to bind the filling.
  6. Remove from heat and stir in lime juice, adjusting seasonings to taste.
  7. Warm tortillas in a damp paper towel in the microwave for 30 seconds to keep them pliable.
  8. Brush a baking sheet with olive oil, lay tortillas on one side, fill them, and fold carefully.
  9. Bake for 8-10 minutes, flip, and bake for another 8-10 minutes until golden-brown.
  10. Cool for 2-3 minutes before serving with your favorite toppings.
