  • 3/4 cup Shredded Cabbage Napa cabbage is a good alternative.
  • 3/4 cup Shredded Radicchio Leaves Use additional green cabbage if unavailable.
  • 1/2 cup Dried Cranberries Raisins or chopped dates can be used as substitutes.
  • 1/2 cup Roasted Pepitas Sunflower seeds can be used if nut allergies are a concern.

Method
 

Step-by-Step Instructions
  1. In a food processor, combine mayonnaise, sugar, sour cream, milk, and cider vinegar. Pulse until smooth, about 30 seconds. Transfer the dressing to a jar and whisk in the poppy seeds.
  2. In a large mixing bowl, add the finely chopped Tuscan kale, broccoli slaw, shredded Brussels sprouts, shredded cabbage, and radicchio. Toss gently for about 1-2 minutes.
  3. Pour half of the creamy poppy seed dressing over the mixed greens. Toss gently for about 1 minute.
  4. Sprinkle the dried cranberries and roasted pepitas over the top of the dressed salad.
  5. Transfer the salad to a serving platter or bowls. Serve with the remaining dressing on the side.
