- Grate the zucchinis into a colander, sprinkle with salt, and let sit for 10 minutes to draw out moisture.
- Preheat the air fryer to 200°C (390°F).
- In a mixing bowl, combine drained zucchini, eggs, chickpea flour, Parmesan, garlic, pepper, onion powder, and parsley. Mix until a thick batter forms.
- Spray the air fryer basket with olive oil, scoop the batter into fritter shapes, leaving space between each.
- Spray the tops of the fritters with olive oil and air fry for 10-12 minutes until golden and crispy.
- Flip the fritters carefully and continue cooking for an additional 8 minutes.
- Let the fritters rest for 2 minutes before serving.
