For the Fritters
  • 2 medium Zucchini Grated
  • 1 teaspoon Salt For drawing out moisture
  • 2 large Eggs Beaten
  • 1 cup Chickpea Flour Can substitute with oat flour
  • 1/2 cup Parmesan Grated, or use nutritional yeast
  • 2 cloves Garlic Fresh minced
  • 1/2 teaspoon Black Pepper
  • 1 teaspoon Onion Powder
  • 1/4 cup Fresh Parsley Chopped, or substitute with dill
  • as needed Olive Oil Spray For spraying the air fryer basket

Method
 

Directions
  1. Grate the zucchinis into a colander, sprinkle with salt, and let sit for 10 minutes to draw out moisture.
  2. Preheat the air fryer to 200°C (390°F).
  3. In a mixing bowl, combine drained zucchini, eggs, chickpea flour, Parmesan, garlic, pepper, onion powder, and parsley. Mix until a thick batter forms.
  4. Spray the air fryer basket with olive oil, scoop the batter into fritter shapes, leaving space between each.
  5. Spray the tops of the fritters with olive oil and air fry for 10-12 minutes until golden and crispy.
  6. Flip the fritters carefully and continue cooking for an additional 8 minutes.
  7. Let the fritters rest for 2 minutes before serving.
