  • 1 teaspoon Chili powder Adjust according to heat preference.
  • 400 grams Diced tomatoes Canned for convenience.
  • 1 cup Heavy cream Use coconut milk for a lighter version.

Method
 

Preparation
  1. In a mixing bowl, combine chicken thighs with plain yogurt, coating well. Marinate for at least 30 minutes or overnight.
  2. Heat oil in a skillet over medium heat. Add onions and sauté for 5-7 minutes until golden brown.
  3. Stir in garlic and ginger; cook for 1 minute until fragrant.
  4. Add garam masala, cumin, turmeric, and chili powder; cook for 2 minutes until toasted.
  5. Mix in diced tomatoes, bring to a simmer, and cook for 10 minutes.
  6. Add marinated chicken; cook for 10-15 minutes until browned and cooked through.
  7. Stir in heavy cream (or coconut milk) and simmer for an additional 5 minutes.
  8. Season with salt and pepper, garnish with coriander, and serve hot.
