Ingredients
  

For the Pasta
  • 8 ounces Pasta Use any shape you love.
For the Pesto
  • 2 cups Arugula Substitute with spinach if needed.
  • 1/2 cup Sun-Dried Tomatoes Fresh tomatoes can be used as an alternative.
  • 1/2 cup Cashews Try pine nuts or walnuts if preferred.
  • 2 cloves Garlic Use sparingly.
  • 1/2 cup Parmesan Cheese Try mashed avocado for a dairy-free version.
  • 1/3 cup Extra Virgin Olive Oil
For the Sauce
  • 1 cup Pasta Cooking Water Reserve some to adjust texture.
  • to taste Salt & Pepper Essential for seasoning.

Method
 

Cooking Instructions
  1. Boil salted water in a large pot. Add pasta and cook according to package instructions (8-10 minutes). Reserve 1 cup of cooking water before draining.
  2. In a food processor, combine arugula, sun-dried tomatoes, cashews, garlic, Parmesan, and salt & pepper. Pulse until coarse.
  3. With the processor running, drizzle in olive oil and a few tablespoons of reserved pasta water until smooth and creamy.
  4. Transfer the drained pasta to a mixing bowl. Combine with pesto, adding reserved water as needed for desired consistency.
  5. Serve hot, garnished with extra Parmesan and a drizzle of olive oil.

Notes
