  • 2 medium Carrots peeled and chopped
  • 1 medium Onion diced, preferably sweet onion
  • 1 inch Ginger fresh, peeled
  • 1 tablespoon Granulated Sugar can be reduced or omitted
  • 3 tablespoons Soy Sauce or tamari for gluten-free
  • 2 tablespoons Rice Vinegar can substitute with apple cider vinegar
  • 1 teaspoon Salt optional if using soy sauce
For the Emulsion
  • 1/2 cup Canola or Vegetable Oil can substitute with olive oil

Instructions
  1. Blend Base Ingredients: In a blender, combine the peeled and chopped carrots, diced onion, fresh ginger, granulated sugar, soy sauce, rice vinegar, and salt. Blend on high for about 30-45 seconds until smooth.
  2. Emulsify: With the blender running on low, gradually add the oil, blending until creamy and cohesive.
  3. Taste and Adjust: Taste the dressing and adjust sweetness or saltiness if needed, blending briefly again.
  4. Serve or Store: Use immediately over salad or store in a sealed jar in the refrigerator for up to 2 weeks.
