- Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with nonstick cooking spray.
- In a medium bowl, combine 1.5 cups of all-purpose flour, 2 teaspoons of baking powder, 0.5 teaspoons of kosher salt, and 2 teaspoons of ground cinnamon. Whisk until well blended.
- In a large bowl, melt 0.25 cup of unsalted butter and mix with 0.25 cup of granulated sugar until combined. Add 1 large egg, 0.5 teaspoons of vanilla extract, and 0.5 cup of unsweetened applesauce; whisk until creamy.
- Fold the dry ingredient mixture into the wet ingredients until just combined; then fold in 1.5 cups of finely diced apples.
- Scoop approximately 1 tablespoon of batter for each fritter onto the prepared baking sheet, spacing them a few inches apart.
