Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and lightly grease a baking sheet with nonstick cooking spray.
  2. In a medium bowl, combine 1.5 cups of all-purpose flour, 2 teaspoons of baking powder, 0.5 teaspoons of kosher salt, and 2 teaspoons of ground cinnamon. Whisk until well blended.
  3. In a large bowl, melt 0.25 cup of unsalted butter and mix with 0.25 cup of granulated sugar until combined. Add 1 large egg, 0.5 teaspoons of vanilla extract, and 0.5 cup of unsweetened applesauce; whisk until creamy.
  4. Fold the dry ingredient mixture into the wet ingredients until just combined; then fold in 1.5 cups of finely diced apples.
  5. Scoop approximately 1 tablespoon of batter for each fritter onto the prepared baking sheet, spacing them a few inches apart.
  6. Bake in the preheated oven for 10 minutes until puffed and golden.
  7. While the fritters bake, whisk together 2 cups of powdered sugar and 1/3 cup plus 2 tablespoons of apple cider until smooth.
  8. Remove baked fritters from the oven and brush them with the warm apple cider glaze. Broil for 2-4 minutes until glaze caramelizes.
  9. Brush any remaining glaze over fritters and let them set for about 15 minutes before serving.
