- Preheat your oven to 400°F (200°C) and position the oven rack in the center.
- Scrub your potatoes under running water. Using a fork, pierce each potato several times. Rub them generously with avocado oil.
- Arrange the prepared potatoes directly on the oven rack and bake for 30 to 40 minutes.
- Carefully slice each baked potato in half lengthwise and scoop out the insides.
- Set the emptied potato halves in a baking dish and season the insides with sea salt and black pepper. Layer in chopped bacon, cheese, and crack an egg into each half.
- Return the filled potato halves to the oven and bake for an additional 15 minutes.
- Add sliced chives on top along with an extra dash of black pepper before serving.
