- Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking pan with parchment paper.
- Melt the salted butter in a saucepan over medium heat until golden brown and fragrant.
- In a mixing bowl, combine brown sugar and granulated sugar with the cooled brown butter.
- Add in the egg, heavy cream, and vanilla extract, mixing until creamy.
- Whisk together the flour, baking soda, baking powder, and salt, then add to the wet ingredients.
- Fold in the chocolate chips until evenly distributed.
- Toast the kataifi in a pan with butter until golden and crispy, then mix with pistachio cream.
- Layer half of the cookie dough in the pan, then the kataifi mixture, followed by the remaining cookie dough.
- Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
- Allow to cool completely, lift from the pan using parchment, and slice into bars.
