Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C) and prepare a 9×9-inch baking pan with parchment paper.
  2. Melt the salted butter in a saucepan over medium heat until golden brown and fragrant.
  3. In a mixing bowl, combine brown sugar and granulated sugar with the cooled brown butter.
  4. Add in the egg, heavy cream, and vanilla extract, mixing until creamy.
  5. Whisk together the flour, baking soda, baking powder, and salt, then add to the wet ingredients.
  6. Fold in the chocolate chips until evenly distributed.
  7. Toast the kataifi in a pan with butter until golden and crispy, then mix with pistachio cream.
  8. Layer half of the cookie dough in the pan, then the kataifi mixture, followed by the remaining cookie dough.
  9. Bake for 25-30 minutes until golden brown and a toothpick comes out clean.
  10. Allow to cool completely, lift from the pan using parchment, and slice into bars.
