  • 1 cup Chopped Apricots Fresh apricots preferred.
  • 1/2 cup Chopped Almonds Can substitute with walnuts or omit.
For the Glaze
  • 1 cup Powdered Sugar Optional but recommended.
  • 2 tablespoons Milk Any milk of choice.
  • 1/2 teaspoon Vanilla Extract Pure vanilla is best.

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 350°F (180°C) and grease and flour a 9-inch loaf pan.
  2. Whisk together the granulated sugar, brown sugar, all-purpose flour, baking powder, and salt in a medium bowl.
  3. In a large bowl, beat the egg, milk, melted butter, and vanilla extract together until smooth.
  4. Gradually fold the dry mixture into the wet ingredients, stirring gently until just combined.
  5. Gently fold in the chopped apricots and almonds until evenly distributed.
  6. Pour the batter into the prepared loaf pan and smooth it out. Sprinkle demerara sugar on top if desired.
  7. Bake for 45-50 minutes until a toothpick comes out clean or with a few moist crumbs.
  8. Allow the bread to cool in the pan for about 10 minutes before transferring to a wire rack to cool completely.
