  • 4 fillets Cod Fresh or thawed from frozen
  • 2 tablespoons Lemon Juice Freshly squeezed
For the Breadcrumb Topping
  • 1 cup Breadcrumbs Plain or seasoned
  • 4 tablespoons Melted Butter Olive oil can be a substitute
  • 1/4 cup Fresh Parsley Chopped, can substitute with dill or basil
  • 2 cloves Minced Garlic Fresh or garlic powder
  • 1/2 medium Onion Finely chopped; shallots are a milder alternative
Optional Enhancements
  • 1/4 cup White Wine Optional, can substitute with fish stock or omit
  • 1 tablespoon Olive Oil Optional for sautéing

Method
 

Cooking Instructions
  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the breadcrumbs, melted butter, parsley, and minced garlic.
  3. Season the cod fillets with salt and pepper, and arrange in a greased baking dish.
  4. Evenly spread the breadcrumb mixture over the fillets.
  5. Drizzle with optional white wine and squeeze fresh lemon juice over the fillets.
  6. Scatter chopped onions around the fish.
  7. Bake in the preheated oven for 20-25 minutes until the cod is opaque and flakes easily.
  8. Let rest for a couple of minutes before serving. Optionally garnish with lemon wedges.
