Step-by-Step Instructions
  1. Prepare the Bruschetta Topping by dicing Roma tomatoes and mixing with minced garlic, torn basil, olive oil, balsamic vinegar, salt, and pepper. Let it marinate for at least 15 minutes.
  2. Cook the chicken by seasoning with salt, pepper, oregano, and garlic powder. Heat olive oil in a skillet over medium heat and cook chicken until golden brown and cooked through. Rest before slicing.
  3. Cook the pasta in salted boiling water for about 8-9 minutes until al dente. Reserve 1/4 cup of cooking water, then drain the pasta.
  4. Combine the pasta with the bruschetta mixture in the skillet over medium heat. If dry, add a splash of reserved pasta water. Layer sliced chicken on top.
  5. Serve warm, optionally garnished with Parmesan cheese and additional basil leaves.
