Method
 

Steps
  1. Preheat your oven to 350°F (175°C). Pound chicken breasts to even thickness of 1/2 inch and season with salt.
  2. Prepare breading by whisking together flour and egg in a shallow bowl. In another bowl, combine panko breadcrumbs, Romano cheese, oregano, lemon zest, garlic powder, and black pepper.
  3. Coat each piece of chicken in egg mixture, then press into breadcrumb mixture until fully coated.
  4. Heat olive oil in a skillet over medium-high heat until shimmering. Fry each cutlet for 2 minutes on each side until golden brown.
  5. Transfer cooked cutlets to a baking dish and top with mozzarella and provolone cheese.
  6. Bake for 8-10 minutes until cheese is bubbly and golden, and chicken reaches 165°F (75°C).
  7. Garnish with green onions and lemon wedges before serving.
