Ingredients
  

For the Curry Base
  • 4 medium Potatoes Can substitute with sweet potatoes
  • 4 cups Fresh Spinach Kale or other leafy greens can be used as alternatives
  • 1 medium Onion Shallots can be used as an alternative
  • 2 cloves Garlic Minced
  • 1 tablespoon Ginger Freshly grated preferred
For the Cooking Process
  • 2 tablespoons Vegetable Oil Any neutral oil like canola or sunflower
  • 1 teaspoon Cumin Seeds Ground cumin can be substituted
  • 1 teaspoon Turmeric Powder No substitutes recommended
  • 1 teaspoon Coriander Powder Optional
  • 1 teaspoon Garam Masala Adds richness
  • to taste Salt Adjust as needed
  • 1 cup Water Essential for cooking potatoes
Finishing Touch
  • 1 tablespoon Lemon Juice Optional; lime juice can be used as an alternative

Method
 

Cooking Instructions
  1. Peel and dice the potatoes into uniform chunks. Wash and chop the fresh spinach coarsely.
  2. Heat vegetable oil in a large pan over medium heat. Add cumin seeds and cook until they crackle.
  3. Add chopped onion and sauté until golden brown and translucent.
  4. Stir in minced garlic and grated ginger, cooking for an additional 1-2 minutes.
  5. Add the diced potatoes, stirring well. Cook for about 5 minutes.
  6. Add turmeric powder, coriander powder, and salt. Mix thoroughly and cook for another minute.
  7. Pour in water and bring to a gentle boil. Lower heat, cover, and let simmer for about 10 minutes.
  8. Fold in the chopped spinach and simmer for another 5 minutes.
  9. Remove from heat and stir in garam masala.
  10. Garnish with lemon juice if desired and serve with naan or basmati rice.
