  • 1 lb Lean Ground Beef Substitute with ground turkey or plant-based options for a healthier version.
  • 1 small Onion, Chopped Yellow or white onions can also be used.
  • 4-5 cloves Garlic, minced Fresh garlic is preferred, but jarred works too.
  • 4 cups Beef or Chicken Broth Vegetable broth makes a great vegetarian alternative.
  • 1 can Corn, drained Frozen corn is a quick substitute for fresh.
  • 1 can Black Beans, drained and rinsed Feel free to swap with pinto or kidney beans.
  • 1 can Chili Beans in Chili Sauce Regular beans with spices can replace this.
  • 1 can Crushed Tomatoes Diced tomatoes can provide a chunkier texture.
  • 1 can Chopped Green Chiles Opt for jalapeños for a spicier kick.
  • 1 tbsp Chili Powder A mix of paprika and cayenne works well if needed.
  • 2 tsp Cumin Ground coriander is a good substitute.
  • 1 tsp Dried Oregano
  • 1 tsp Onion Powder
  • 1 tsp Garlic Powder
  • to taste Salt
  • to taste Pepper
  • to taste Cayenne Pepper

Preparation Steps
  1. In a large pot over medium heat, add lean ground beef and chopped onion. Cook for about 5-7 minutes until the meat is well-browned and the onions become translucent.
  2. Stir in minced garlic and let it cook for an additional 2 minutes. Sprinkle in the chili powder, cumin, oregano, onion powder, garlic powder, salt, and pepper.
  3. Carefully add 4 cups of beef or chicken broth, then add the drained corn, black beans, chili beans, crushed tomatoes, and green chiles. Stir to combine.
  4. Cover the pot and bring to a gentle simmer over medium-low heat. Cook for 15 minutes, stirring occasionally.
  5. Ladle the soup into bowls and let everyone customize with toppings such as sour cream, chopped cilantro, diced avocado, or shredded cheese.
