Ingredients
  

For the Base
  • 2 tablespoons Olive oil can substitute with canola or avocado oil
  • 12 ounces Smoked or Italian sausage use precooked for speed or raw for more depth
  • 3 cloves Garlic minced, fresh is preferable
  • 2 cans White beans great northern, butter, or cannellini beans work well
  • 1 cup Chicken stock vegetable broth works for vegetarian option
For Seasoning
  • 1 teaspoon Kosher salt adjust to taste
  • 1/2 teaspoon Black pepper freshly cracked is best
  • 1 teaspoon Fresh thyme or dried thyme at one-third the amount
For the Finish
  • 3 cups Curly kale or spinach or other leafy greens
  • 1 tablespoon Fresh lemon juice fresh squeezed is best
  • 1/2 cup Parmesan cheese or alternatives like Pecorino Romano
  • 1 teaspoon Red pepper flakes optional, adjust based on spice preference

  • 1 loaf Crusty bread for dipping

Cooking Steps
  1. In a 12-inch skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Add sliced smoked or Italian sausage and cook for 4–5 minutes until browned and crispy, stirring occasionally. Transfer the sausage to a plate, leaving drippings in the skillet.
  2. In the same skillet, add 3 cloves of minced garlic and sauté for about 30 seconds until fragrant and lightly golden.
  3. Stir in two-thirds of the drained white beans, 1 cup of chicken stock, 1 teaspoon of kosher salt, 1/2 teaspoon of black pepper, and 1 teaspoon of fresh thyme. Bring to a gentle simmer.
  4. Mash the remaining one-third of the white beans in a bowl until thick, then stir into the skillet.
  5. When bubbling, add 3 cups of chopped curly kale. Stir until wilted, about 2 minutes.
  6. Stir in 1/2 cup of grated Parmesan cheese and the juice of 1 fresh lemon, then mix in the cooked sausage.

Notes
