Cooking Steps
- In a 12-inch skillet, heat 2 tablespoons of olive oil over medium-high heat until shimmering. Add sliced smoked or Italian sausage and cook for 4–5 minutes until browned and crispy, stirring occasionally. Transfer the sausage to a plate, leaving drippings in the skillet.
- In the same skillet, add 3 cloves of minced garlic and sauté for about 30 seconds until fragrant and lightly golden.
- Stir in two-thirds of the drained white beans, 1 cup of chicken stock, 1 teaspoon of kosher salt, 1/2 teaspoon of black pepper, and 1 teaspoon of fresh thyme. Bring to a gentle simmer.
- Mash the remaining one-third of the white beans in a bowl until thick, then stir into the skillet.
- When bubbling, add 3 cups of chopped curly kale. Stir until wilted, about 2 minutes.
- Stir in 1/2 cup of grated Parmesan cheese and the juice of 1 fresh lemon, then mix in the cooked sausage.
