- Activate the baking powder with a tablespoon of water and mix it into your egg mixture.

- Pour in the olive oil and mix until the batter is smooth and cohesive.

- Fill each muffin cup with the egg mixture, almost to the top.

- Bake for 18-20 minutes until set in the middle and golden on top.

- Allow the bites to cool in the tin for about 5 minutes before removing.
