Step-by-Step Instructions
  1. Cook the lobsters in a large pot of salted boiling water for 8-10 minutes until vibrant red. Transfer to an ice bath and cool before cracking shells.
  2. In a skillet, melt butter over medium heat. Add shallots and sauté for 2 minutes. Incorporate mushrooms and cook until tender.
  3. Pour in white wine, simmer for 3-4 minutes. Stir in heavy cream and cook for another 3 minutes until sauce thickens.
  4. Fold lobster meat into sauce with paprika and half of the parmesan. Season with salt and pepper.
  5. Preheat broiler. Fill lobster shells with mixture, top with remaining parmesan, and broil for 3-5 minutes until golden.
  6. Remove from oven, cool slightly, and serve warm.
