Instructions
  1. In a medium bowl, whisk together 4 large eggs, 2 tablespoons of milk, ¼ teaspoon of salt, ¼ teaspoon of black pepper, and a dash of paprika, if desired. Whisk until the mixture is frothy and well combined.
  2. Place a non-stick frying pan over medium heat and add 1 tablespoon of unsalted butter. Allow the butter to melt completely.
  3. Once the butter is sizzling, pour the egg mixture into the center of the pan. Allow it to cook undisturbed for approximately 30 seconds until the edges begin to set.
  4. Carefully place two slices of thick bread on top of the partly cooked egg. Press down gently with a spatula to ensure the bread soaks in some of the egg mixture.
  5. Using a wide spatula, gently flip the omelette over. Add another tablespoon of butter to the pan. Cook for an additional 1-2 minutes until the bottom is golden brown.
  6. Once flipped, sprinkle ½ cup of shredded cheese over one half of the omelette. Allow it to cook for about 1 minute until the cheese melts.
  7. Carefully fold the omelette in half over the melted cheese using the spatula. Let it cook for an additional 30 seconds to warm through.
  8. Finish by garnishing your French-style bread omelette with freshly chopped parsley or chives. Serve immediately.
