Ingredients
  

For the Steak
  • 4 pieces Ribeye Steaks Can substitute with sirloin or filet mignon
  • 1 teaspoon Salt
  • 1 teaspoon Pepper
  • 2 tablespoons Butter Use unsalted for better control
For the Parmesan Cream Sauce
  • 3 cloves Garlic Minced
  • 1 cup Heavy Cream Can use half-and-half for a lighter version
  • 1 cup Grated Parmesan Cheese Asiago or Pecorino can be substituted
For the Finishing Touch
  • 2 tablespoons Fresh Parsley Chopped

Method
 

Cooking Instructions
  1. Season both sides of the ribeye steaks with salt and pepper, and let sit for 15 minutes at room temperature.
  2. Preheat a heavy-bottomed skillet over medium-high heat and add 2 tablespoons of butter.
  3. Cook the steaks in the skillet for 4-5 minutes without moving, adding remaining butter and minced garlic halfway.
  4. Once browned and cooked to 130°F for medium-rare, transfer the steaks to a cutting board and let rest for 5 minutes.
  5. Pour heavy cream into the skillet, whisking to combine flavors while scraping the browned bits.
  6. Stir in grated Parmesan cheese until melted and sauce thickens.
  7. Slice the rested steaks against the grain, plate and drizzle with Parmesan sauce, and garnish with parsley.
