- Season both sides of the ribeye steaks with salt and pepper, and let sit for 15 minutes at room temperature.
- Preheat a heavy-bottomed skillet over medium-high heat and add 2 tablespoons of butter.
- Cook the steaks in the skillet for 4-5 minutes without moving, adding remaining butter and minced garlic halfway.
- Once browned and cooked to 130°F for medium-rare, transfer the steaks to a cutting board and let rest for 5 minutes.
- Pour heavy cream into the skillet, whisking to combine flavors while scraping the browned bits.
- Stir in grated Parmesan cheese until melted and sauce thickens.
- Slice the rested steaks against the grain, plate and drizzle with Parmesan sauce, and garnish with parsley.
