Step-by-Step Instructions for Garlic Scape Pasta
  1. Bring a large pot of salted water to a vigorous boil over high heat. Add your preferred pasta and cook according to the package instructions, usually about 8-12 minutes, until al dente.
  2. In a large skillet, melt 2 tablespoons of vegan butter or heat olive oil over medium heat. Add the chopped garlic scapes and dried thyme, sautéing for about 5-8 minutes.
  3. Before draining the cooked pasta, be sure to scoop out 2-3 tablespoons of the pasta water and set it aside in a small bowl.
  4. Return the drained pasta to the large pot. Gently fold in the sautéed garlic scapes, reserved pasta water, lemon juice, and zest.
  5. Taste and adjust the seasoning with fresh cracked black pepper and salt if needed. Serve immediately.
