  • 4 cups Vegetable Broth opt for low-sodium
  • 6-8 cloves Garlic minced, fresh cloves preferred
  • 2 tablespoons Olive Oil can substitute with neutral oil
  • 2 cups Bread stale works best, fresh is acceptable
For the Topping
  • 1 cup Sour Cream optional, or dairy-free version for vegan

Method
 

Step‑by‑Step Instructions for Garlic Soup
  1. In a medium pot, add 2 tablespoons of olive oil and heat it over medium heat for about 1-2 minutes.
  2. Add 6-8 minced garlic cloves to the hot oil, sautéing for about 1-2 minutes until fragrant and golden.
  3. Pour in 4 cups of vegetable broth, stir gently and bring to a simmer for around 3-4 minutes.
  4. Cut 2 cups of stale bread into cubes and add them to the bubbling broth, allowing to soak for 2-3 minutes.
  5. Using an immersion blender, blend the soup until smooth and velvety for about 1-2 minutes.
  6. Pour the creamy garlic soup into bowls and serve hot, adding a dollop of sour cream if desired.
