For the Dressing
  • 1 tablespoon Low-Sodium Soy Sauce
  • 2 tablespoons Rice Vinegar
  • 1/4 cup Creamy Peanut Butter
  • 1 tablespoon Honey Adjust to taste
  • 1 clove Garlic Freshly minced
  • 1/2 teaspoon Crushed Red Pepper Flakes Adjust to taste

Method
 

Preparation
  1. Wash and slice the cucumbers into thin ribbons using a vegetable peeler or mandoline. Place in a colander and sprinkle with salt. Toss gently and let drain for 1 hour.
  2. In a medium bowl, mix the dressing ingredients: soy sauce, rice vinegar, peanut butter, honey, garlic, red pepper flakes, and black pepper. Whisk until smooth.
  3. After an hour, gently squeeze cucumbers to remove moisture. Transfer to a clean bowl and add toasted peanuts and parsley. Pour the dressing over and toss to combine.
  4. Serve immediately on plates or a platter, showcasing the colors of cucumbers, peanuts, and parsley.
