Method
 

Step-by-Step Instructions
  1. Preheat your oven to 220°C (428°F).
  2. Generously season both sides of the pork chops with salt and pepper.
  3. Melt the butter in a small saucepan over medium-low heat. Mix in the minced garlic and chopped fresh thyme, and simmer for about 2 minutes.
  4. Heat a heavy skillet over medium-high heat and add extra virgin olive oil.
  5. Sear the pork chops in the skillet for about 2 minutes on each side until golden-brown.
  6. Baste the pork chops with the garlic-thyme butter mixture for about 30 seconds.
  7. Transfer the skillet to the preheated oven and roast for 10-14 minutes until reaching an internal temperature of 145°F (63°C).
  8. Remove from the oven and let the pork chops rest for at least 5 minutes before serving.
