Ingredients
  

For the Casserole
  • 1 lb Boneless Skinless Chicken Breast or chicken thighs for juiciness
  • 2 tbl Olive Oil can replace with avocado oil
  • 1 tsp Salt
  • 1/2 tsp Black Pepper adjust to taste
  • 1 medium Onion yellow or sweet
  • 3 cloves Garlic minced
  • 1 medium Red Bell Pepper
  • 1 medium Zucchini or yellow squash
  • 2 cups Fresh Spinach can substitute with kale
  • 1 tbl Dried Oregano or 3 tbl fresh
  • 1 tsp Dried Thyme or 3 tsp fresh
  • 1/2 tsp Red Pepper Flakes optional
  • 1 cup Orzo Pasta or other small pasta shapes
  • 2 cups Chicken Broth can replace with vegetable broth
  • 2 tbl Fresh Lemon Juice or vinegar
  • 1 cup Feta Cheese or nutritional yeast for non-dairy
  • 2 tbl Parsley optional, for garnish
  • 1/2 cup Kalamata Olives can replace with another olive variety

Method
 

Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C).
  2. In an oven-safe skillet, heat olive oil over medium-high heat and brown chicken breasts for 5-6 minutes on each side.
  3. Add onion to the skillet and sauté until translucent. Stir in garlic, red bell pepper, and zucchini, cooking until softened.
  4. Stir in spinach and herbs, cooking until spinach wilts.
  5. Mix in orzo, chicken broth, and lemon juice, stirring until combined and allowing to bubble gently.
  6. Nestle chicken into the orzo mixture, cover, and bake for 25-30 minutes until chicken is cooked through.
  7. Sprinkle feta cheese, parsley, and olives over the casserole and bake for an additional 5 minutes.
  8. Let the casserole rest for a few minutes before serving.
