  • 1 packet Taco Seasoning consider making your own
  • 1 cup Cooked White Rice or brown rice or quinoa
  • 1/2 cup Sour Cream or yogurt or dairy-free alternatives
  • 1 cup Nacho Cheese Sauce use homemade or vegan cheese
  • 1 cup Shredded Cheddar Cheese or mozzarella or a Mexican cheese blend
  • 1 cup Shredded Mozzarella Cheese optional or can use lower-fat cheese
  • 2 tablespoons Chipotle Sauce adjust to spice tolerance
For the Wrap
  • 4 pieces Flour Tortillas or whole wheat or gluten-free
  • 1 tablespoon Butter or Oil for grilling

Method
 

Step by Step Instructions
  1. In a skillet over medium heat, brown the ground beef for 8–10 minutes until fully cooked. Drain excess grease and add taco seasoning and a splash of water. Simmer for an additional 5 minutes.
  2. While the beef is simmering, heat tortillas in a dry skillet over low heat for about 30 seconds on each side. Alternatively, microwave for 20 seconds wrapped in a damp paper towel.
  3. Lay one warmed tortilla flat and layer with white rice, seasoned beef, nacho cheese sauce, sour cream, chipotle sauce, and shredded cheeses.
  4. In a skillet over medium heat, melt butter or add oil. Place assembled burrito seam-side down in the skillet and grill for 3–4 minutes until golden brown. Flip and grill for another 3–4 minutes.
  5. Remove the burrito from the skillet, cool for a minute, slice in half, and serve warm with additional chipotle sauce or guacamole.
