- Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
- In a large bowl, combine the chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and sprinkle with oregano, basil, paprika, salt, and pepper. Toss until well coated.
- Spread the mixture evenly in the greased baking dish and top with mozzarella and Parmesan.
- Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden.
