Step-by-Step Instructions
  1. Preheat your oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
  2. In a large bowl, combine the chicken, zucchini, cherry tomatoes, red onion, and garlic. Drizzle with olive oil and sprinkle with oregano, basil, paprika, salt, and pepper. Toss until well coated.
  3. Spread the mixture evenly in the greased baking dish and top with mozzarella and Parmesan.
  4. Cover with foil and bake for 20 minutes. Remove the foil and bake for an additional 10-15 minutes until the cheese is golden.
  5. Let it cool slightly, garnish with parsley, and serve warm.
