- Boil a large pot of salted water. Add pasta and cook until al dente, usually 8-10 minutes. Drain and set aside, reserving a cup of pasta water.
- Heat olive oil in a large skillet over medium heat. Add chopped onion and minced garlic; sauté for 3-5 minutes until onions are translucent.
- Add the ground beef to the skillet, breaking it apart. Cook for 6-8 minutes until browned and no longer pink. Drain excess fat.
- Stir in diced tomatoes and simmer on low for 3-4 minutes to blend flavors.
- Reduce heat to low and mix in Greek yogurt and grated Parmesan cheese, stirring for 2-3 minutes until creamy.
- Combine the drained pasta with beef sauce in the skillet, folding gently. Adjust consistency with reserved pasta water if needed.
- Simmer for an additional 2-3 minutes, taste and adjust seasoning, then serve warm garnished with extra Parmesan.
