Preparation
- Marinate your chicken breast pieces in a blend of Cajun seasoning and olive oil. Cover and refrigerate for at least 30 minutes, or overnight.
- Heat a large skillet over medium-high heat and add grass-fed butter. Cook the marinated chicken for about 6-8 minutes on each side until golden and cooked through. Remove from skillet and let it rest.
- In the same skillet, reduce the heat and sauté chopped red onion and minced garlic for 3-4 minutes until translucent.
- Stir in the day-old rice and remaining Cajun seasoning, mixing well for about 2-3 minutes until heated through.
- Melt more butter in a saucepan over low heat. Whisk in the milk, then cream cheese and Parmesan until smooth and creamy.
- To assemble, scoop Cajun rice onto a platter, slice rested chicken, and drizzle the creamy sauce over it. Garnish with fresh parsley.
