Method
 

Step-by-Step Instructions
  1. Combine warm water, instant dry yeast, and sugar. Let sit for 3-5 minutes until frothy.
  2. Whisk together bread flour, whole wheat flour, brown sugar, cocoa powder, and salt in a large bowl.
  3. Add the yeast mixture to the dry ingredients along with canola oil, honey, and molasses. Stir until a shaggy dough forms.
  4. Knead the dough using a stand mixer or by hand until smooth and elastic, about 5 minutes in a mixer or 10-12 minutes by hand.
  5. Shape the dough into a ball, spray with oil, and cover with a towel. Let rise in a warm place for 1 to 1.5 hours.
  6. Punch down the dough, divide into four pieces, and shape into logs. Place on a baking sheet and score the tops.
  7. Cover the shaped loaves and let rise for another 30-40 minutes.
  8. Preheat the oven to 350°F with an empty baking sheet on the bottom rack.
  9. Add ice cubes to the baking sheet just before placing the bread in the oven.
  10. Bake for 25-30 minutes until golden brown and hollow sounding when tapped.
