Ingredients
  

For the Cake Batter
  • 325 g All-Purpose Flour or cake flour for lighter texture
  • 2 tbsp Cornstarch
  • 1 tbsp Baking Powder do not substitute with baking soda
  • 0.5 tsp Salt skip if using salted butter
  • 1 cup Milk room temperature
  • 1 tbsp White Vinegar optional but enhances texture
  • 5 large Egg Whites for fluffiness
  • 0.75 cup Unsalted Butter room temperature
  • 0.25 cup Vegetable Oil can use canola oil
  • 1.75 cups Granulated Sugar
  • 2 tsp Vanilla Extract opt for pure vanilla
  • 0.75 cup Rainbow Sprinkles thin long sprinkles recommended
For the Frosting
  • 1 cup Unsalted Butter softened
  • 4 cups Powdered Sugar sifted
  • 1 tsp Vanilla Extract pure for best flavor
  • 2-4 tbsp Heavy Cream adjust for consistency

Method
 

Baking Instructions
  1. Preheat your oven to 180°C (350°F) and prepare two 8-inch round cake pans by greasing and lining them with parchment paper.
  2. Sift together the flour, cornstarch, baking powder, and salt in a mixing bowl.
  3. Combine milk and vinegar in a separate bowl and let it sit for a few minutes to sour.
  4. Cream together the butter, vegetable oil, and sugar until light and fluffy.
  5. Gradually incorporate egg whites into the creamed mixture.
  6. Add vanilla extract and half of the milk mixture, then mix in the dry ingredients and the remaining milk mixture.
  7. Fold in sprinkles gently into the batter.
  8. Divide the batter between prepared pans and bake for 30 minutes or until a toothpick comes out clean.
  9. Allow cakes to cool in pans for 15-20 minutes, then transfer to wire racks to cool completely.
  10. Beat together butter, powdered sugar, vanilla extract, and heavy cream to make the frosting.
  11. Frost the layers and decorate as desired.
