Method
 

Preparation Steps
  1. In a medium bowl, combine honey, fresh lime juice, lime zest, minced garlic, ground cumin, salt, and pepper. Whisk well.
  2. Place chicken into a resealable bag. Pour marinade over chicken, seal, and refrigerate for 30 minutes to 2 hours.
  3. Rinse jasmine rice under cold water until clear. In a saucepan, bring chicken broth to a boil, then add rice. Cover and simmer for 15 minutes.
  4. Preheat grill to medium-high heat. Grill chicken for 6–7 minutes on each side until cooked through. Rest before slicing.
  5. In a bowl, combine diced avocado, red onion, cilantro, and olive oil. Toss gently.
  6. Load a plate with jasmine rice, layer sliced chicken, and top with avocado mix.
  7. Garnish with lime wedges and serve immediately.
