- Preheat your oven to 400°F (200°C). Slice your apples into thin wedges and toss them in a bowl with cinnamon and nutmeg until evenly coated. Spread the apple slices on a baking sheet lined with parchment paper and roast them for about 15-20 minutes. Once tender, remove them from the oven and let them cool slightly before assembly.
- While the apples are roasting, soften about 4 tablespoons of butter until creamy. Chop fresh herbs of your choice, such as thyme or rosemary, and mix them into the butter. Once well combined, set this herb butter aside.
- Take two slices of your favorite bread and generously spread the herb butter on one side of each slice. On the unbuttered side, layer the roasted apples, followed by slices of sharp cheddar cheese, and pieces of crispy candied bacon. Drizzle the hot honey over the top.
- Heat a non-stick skillet over medium-low heat. Place the sandwich in the skillet, buttered side down, and cook it for about 3-4 minutes or until the bread is golden brown. Carefully flip the sandwich and grill the other side for another 3-4 minutes, until the cheese is melty.
- Once grilled, remove the sandwich from the skillet and let it rest for a minute. Cut it in half and serve immediately while warm.
