Step-by-Step Instructions
  1. Set the Instant Pot to sauté on high heat. Add oil, season stew meat with salt and pepper, and brown in batches for 5-7 minutes. Remove and set aside.
  2. Add remaining oil and sauté diced sweet onion for 5 minutes until translucent. Add minced garlic and cook for 30 more seconds.
  3. Pour in the beef broth to deglaze the pot, scraping up any browned bits for added flavor.
  4. Return browned beef tips to the pot, add Worcestershire sauce, bay leaf, Italian seasoning, and thyme. Secure lid and pressure cook on high for 25 minutes. Allow a natural release for 10 minutes.
  5. Switch back to sauté mode. Mix cornstarch with water to create a slurry and pour into the pot. Stir for 2-3 minutes until gravy thickens.
  6. Serve beef tips and gravy over your choice of mashed potatoes, rice, or egg noodles. Garnish with fresh parsley if desired.
