Method
 

Step-by-Step Instructions
  1. Preheat your oven to 400°F (200°C) and grease a baking sheet with nonstick cooking spray or use parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and cinnamon until well combined.
  3. In a large mixing bowl, combine the melted butter and sugar, whisking until blended. Add the egg, vanilla extract, and applesauce, whisking until smooth.
  4. Gradually fold the dry ingredients into the wet ingredients until just combined. Gently fold in the diced apples.
  5. Drop heaping spoonfuls of batter onto the prepared baking sheet, spacing them at least two inches apart.
  6. Bake for approximately 10 minutes, then turn on the broiler for an additional 2-4 minutes until golden.
  7. Prepare the apple cider glaze by whisking together powdered sugar and apple cider until smooth.
  8. Brush the glaze over the warm fritters, allowing it to drip down the sides for an appealing finish.
  9. Use remaining glaze to generously brush the tops of the fritters. Allow to sit for 15 minutes to set before serving.
