Preparation Steps
  1. Preheat your oven to 350°F (177°C). Line an 8" x 8" baking pan with aluminum foil.
  2. In a medium bowl, mix melted unsalted butter, granulated sugar, vanilla extract, salt, lemon zest, and all-purpose flour until smooth.
  3. Transfer the crust mixture into the prepared pan, pressing it down evenly.
  4. Bake for 12-15 minutes until lightly golden and firm.
  5. In a large bowl, beat room temperature cream cheese and granulated sugar until creamy. Add eggs one at a time, mixing well. Stir in lemon juice, yogurt, salt, and a touch of flour until smooth.
  6. Pour the cheesecake filling over the pre-baked crust, sprinkle with blueberries evenly.
  7. Bake for 30-35 minutes until edges are set but center jiggles slightly.
  8. Cool completely on a wire rack before slicing into squares.
  9. Store any leftovers in an airtight container in the refrigerator or freeze wrapped.
