Method
 

Step-by-Step Instructions
  1. Preheat your oven to 500°F (260°C). Toast croissants cut-side up for 5 to 10 minutes until golden brown.
  2. In a large skillet, heat olive oil over medium-high heat. Cook scallions and sausage for about 5 minutes until browned.
  3. In a mixing bowl, combine toasted croissants and sausage mixture, tossing gently.
  4. In another bowl, whisk together eggs, milk, cream, Gruyère cheese, salt, and pepper until smooth.
  5. Lightly oil a 9x13-inch baking dish and layer the croissant mixture. Pour the custard mixture over the top.
  6. Cover the dish with plastic wrap and refrigerate for at least 4 hours or ideally overnight.
  7. Preheat the oven to 350°F (175°C). Scatter remaining Gruyère cheese on top and bake for about 45 minutes.
  8. Allow the casserole to cool for about 10 minutes before serving. Garnish with chopped scallions.
