Preparation
- Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan thoroughly and line the bottom with parchment paper.
- In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth, about 2-3 minutes. Add sour cream, heavy cream, and vanilla; blend until combined. Gradually mix in room temperature eggs one at a time until smooth.
- In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. In a separate bowl, mix oil and both sugars, then add eggs, sour cream, and vanilla. Stir in grated carrots and fold in the dry mixture until just combined.
- Pour half of the carrot cake batter into the prepared springform pan. Dollop a third of the cheesecake batter over. Layer remaining batters, finishing with cheesecake batter. Avoid swirling for a marbled effect.
- Bake for 45-55 minutes until the center jiggles slightly but edges are set. This creates a creamy texture.
- Cool completely in the pan, then cover and refrigerate for at least 6 hours or overnight.
- For the frosting, beat together unsalted butter and cream cheese until creamy. Gradually add powdered sugar and vanilla until smooth. Frost the chilled Carrot Cake Cheesecake generously before serving.
