Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9-inch springform pan thoroughly and line the bottom with parchment paper.
  2. In a large mixing bowl, beat the cream cheese and granulated sugar together until smooth, about 2-3 minutes. Add sour cream, heavy cream, and vanilla; blend until combined. Gradually mix in room temperature eggs one at a time until smooth.
  3. In another bowl, whisk together flour, baking powder, baking soda, salt, cinnamon, nutmeg, and ginger. In a separate bowl, mix oil and both sugars, then add eggs, sour cream, and vanilla. Stir in grated carrots and fold in the dry mixture until just combined.
  4. Pour half of the carrot cake batter into the prepared springform pan. Dollop a third of the cheesecake batter over. Layer remaining batters, finishing with cheesecake batter. Avoid swirling for a marbled effect.
  5. Bake for 45-55 minutes until the center jiggles slightly but edges are set. This creates a creamy texture.
  6. Cool completely in the pan, then cover and refrigerate for at least 6 hours or overnight.
  7. For the frosting, beat together unsalted butter and cream cheese until creamy. Gradually add powdered sugar and vanilla until smooth. Frost the chilled Carrot Cake Cheesecake generously before serving.
