- Preheat your oven to 400°F (200°C).
- Take your frozen puff pastry out of the freezer and let it thaw for about 30 minutes. Roll it out and slice into 24 rectangles.
- Grease your mini cupcake tray with non-stick cooking spray or butter.
- Place a piece of brie cheese into each pastry cup, followed by a thin slice of pear.
- Bake for 10-12 minutes or until golden brown and puffed up.
- Add a small piece of prosciutto on top of each tart while still warm.
- Transfer to a serving platter and garnish with fresh herbs. Serve warm.
