- Begin by placing a non-stick frying pan over medium-low heat. Allow the pan to warm up for about 5 minutes.
- Spread a generous layer of butter on one side of each slice of sourdough bread.
- Carefully place the slices of sourdough in the pan with the buttered side facing down.
- Layer 3-4 slices of mozzarella cheese over each slice of bread.
- Add a heaped tablespoon of basil pesto over each layer of cheese, spreading it gently.
- If desired, sprinkle sun-dried tomatoes and pre-cooked bacon over the pesto.
- Top each sandwich with another layer of mozzarella cheese.
- Place another slice of sourdough on top of each sandwich, buttered side up.
- Lightly press down on each sandwich to secure the filling. Cook for about 3-4 minutes.
- Gently flip each sandwich and cook the other side for an additional 3-4 minutes.
- Once both sides are golden and crispy, remove the sandwiches from the pan and let cool for a minute before slicing.
