Step-by-Step Instructions
  1. In a large bowl, combine diced chicken breast or thighs with salt, garlic powder, paprika, curry powder, and Greek yogurt. Mix well and let it marinate in the refrigerator for at least 15 minutes.
  2. Heat a large skillet over medium-high heat, add half the butter and a drizzle of cooking oil. Once hot, add the marinated chicken and sear for 4-5 minutes until golden brown.
  3. In the same skillet, add remaining butter and let it melt. Toss in minced garlic and diced onion, sauté until softened, about 3-4 minutes.
  4. Stir in tomato sauce, sugar, salt, black pepper, and additional curry powder. Bring to a gentle simmer for 5-7 minutes.
  5. Reduce heat to low and stir in heavy cream, mixing until thickened, about 3-5 minutes.
  6. Add seared chicken back into skillet, sprinkle garam masala, stir gently, and simmer for an additional 8-10 minutes.
  7. Serve hot, garnished with chopped parsley or cilantro.
