Step-by-Step Instructions
  1. Preheat your oven to 350°F (175°C). Grease and flour an 8 x 5 inch loaf pan or line with parchment paper.
  2. In a small bowl, combine the brown sugar and ground cinnamon, whisking until evenly mixed and set aside.
  3. In a large mixing bowl, whisk together the eggs and granulated sugar until fully combined, then stir in the melted butter and vanilla extract.
  4. Gradually mix in the flour, baking powder, baking soda, and salt until just combined, avoiding overmixing.
  5. Gently fold in the chopped apples, ensuring they are evenly distributed throughout the batter.
  6. Pour half of the batter into the prepared loaf pan and sprinkle three-quarters of the cinnamon sugar mixture over this layer.
  7. Add the remaining batter on top and sprinkle the rest of the cinnamon-sugar mixture, swirling gently with a knife.
  8. Bake for 35-45 minutes until the top is golden brown and a toothpick inserted in the center comes out clean.
