  • 1/4 cup unsweetened coconut milk adjust as needed for consistency

Method
 

Preparation Steps
  1. Preheat your oven to 350°F (175°C) and prepare your loaf pan by greasing it.
  2. In a medium bowl, whisk together the flour, baking powder, and salt.
  3. In a large bowl, cream together the sugar and butter until light and fluffy; add eggs one at a time, then stir in coconut milk and vanilla.
  4. Fold the dry ingredients into the wet ingredients until just combined.
  5. Fold in the coconut flakes.
  6. Transfer the batter into the prepared loaf pan.
  7. Bake for 45-55 minutes or until golden brown and a toothpick comes out clean.
  8. Allow the bread to cool in the pan for about 10 minutes, then transfer to a wire rack.
  9. In a small bowl, whisk together the confectioner's sugar and coconut milk until smooth.
  10. Drizzle the glaze over the cooled bread and sprinkle with toasted coconut.
