  • 4 pieces Chicken Breasts Tender and juicy
  • 2 tablespoons Olive Oil Can substitute with any vegetable oil

  • to taste Black Pepper
For the Sauce
  • 2 pieces Jalapenos Remove seeds for milder flavor
  • 2 pieces Peaches Fresh or canned
  • 2 tablespoons Honey Maple syrup is an alternative
  • 2 tablespoons Apple Cider Vinegar Regular vinegar can be used
  • 1/4 cup Water To thin the glaze
  • 1 tablespoon Cornstarch Can be omitted

Method
 

Cooking Steps
  1. Preheat the oven to 375°F (190°C).
  2. Season the chicken breasts with salt and black pepper.
  3. Heat olive oil in a large oven-safe skillet over medium-high heat.
  4. Sear the chicken for 3-4 minutes on each side until golden brown.
  5. Add diced jalapenos and peaches to the skillet and sauté for 2-3 minutes.
  6. In a bowl, whisk together honey, apple cider vinegar, water, and cornstarch. Pour over the jalapenos and peaches.
  7. Return the chicken to the skillet and spoon the sauce over it.
  8. Bake in the oven for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
  9. Let the chicken rest for 5-7 minutes.
  10. Serve hot with extra sauce and fresh herbs.
