Cooking Steps
- Preheat the oven to 375°F (190°C).
- Season the chicken breasts with salt and black pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat.
- Sear the chicken for 3-4 minutes on each side until golden brown.
- Add diced jalapenos and peaches to the skillet and sauté for 2-3 minutes.
- In a bowl, whisk together honey, apple cider vinegar, water, and cornstarch. Pour over the jalapenos and peaches.
- Return the chicken to the skillet and spoon the sauce over it.
- Bake in the oven for 20-25 minutes until the chicken reaches an internal temperature of 165°F (74°C).
- Let the chicken rest for 5-7 minutes.
- Serve hot with extra sauce and fresh herbs.
