  • 6 ounces Spinach Use fresh spinach for best texture

Method
 

Preparation Steps
  1. In a small pan over low heat, toast sesame seeds for about 6 to 7 minutes until golden. Grind them into a fine powder.
  2. In a bowl, combine ground sesame seeds with soy sauce, granulated sugar, dashi powder, and water. Stir until smooth.
  3. Bring a pot of water to a boil and add salt. Blanch fresh spinach for 1 minute until bright green, then drain.
  4. Transfer drained spinach into a bowl of ice water to cool quickly.
  5. Once cool, squeeze out excess moisture from spinach.
  6. Chop spinach into 2-inch pieces and place in a mixing bowl.
  7. Add sesame dressing to spinach and toss gently until coated. Serve immediately.
