For the Coconut Curry Sauce
  • 1 can Coconut Milk high-quality
  • 1 tablespoon Curry Powder consider Jamaican curry powder for authenticity

Step-by-Step Instructions
  1. In a mixing bowl, combine the ground pork, minced garlic, chopped scallions, grated ginger, and jerk seasoning. Use your hands to blend the ingredients until just mixed.
  2. With your hands, form the mixture into 20 meatballs about 1 to 1.5 inches in diameter.
  3. Add oil to a preheated skillet and brown the meatballs for 5-7 minutes, turning occasionally.
  4. Remove the meatballs, pour in the coconut milk and sprinkle the curry powder. Stir and cook for 2-3 minutes.
  5. Return the meatballs to the skillet, cover, and let simmer for 15-20 minutes.
  6. Serve hot over jasmine rice or alongside steamed vegetables.
